With my family’s busy schedule, our crockpot is my best friend. I’ve been trying to branch out from the three meals I know how to cook, so we’re trying a lot of new things. I love anything that I can throw in the crockpot and have done by the time all three of us are home for the night.
Usually I have time to put together a crockpot meal the night before so that it’s really easy to throw in before I head to work in the morning. When I completely forget to think about dinner, I throw an assortment of random things in the crockpot and hope for the best. Most recently I made a pretty decent soup by tossing random vegetables (canned and fresh) and some chicken stock in the crockpot. When I got home from work, I added in some rice and called it done.
A problem that I always run into is finding the time to go to the store and buy the things that actually go into the crockpot. In order to have planned meals, I have to have a well planned grocery list. If I go without a list, I buy random things that don’t add up to a meal. I usually spend too many hours planning meals and making the list, and then too many hours shopping for the things on the list, and then I have no energy to actually prep or cook things. My “secret” solution is grocery delivery. I always thought it seemed unnecessary to have my groceries delivered until I did the AmazonFresh free trial. I do like that I can throw things in without thinking about it and have it be a successful meal, but I much prefer to have planned meals that I know will turn out well. My best resource for finding new recipes for us to try is obviously Pinterest. I’ve spent so many hours scouring Pinterest for recipes that I think I can actually make and that all of us will actually like. Here are my top five favorite crockpot recipes that I’ve found on Pinterest:

I make small changes to each of these based on my food preferences. I used to think that recipes had to followed EXACTLY, which always made things hard for me because I’m such a picky eater. I finally realized that I can make any changes I want, and now I think of recipes as guidelines for our meals. My husband and son will eat almost anything, so I generally only make changes if there’s something I don’t like. For example, I’m not a huge fan of ground beef so in the Kristine’s Kitchen Taco Pasta recipe, I swap the ground beef for ground turkey. I also take the onions out of the Kitchn Honey Teriyaki Chicken recipe. Small changes like those make the meal feel a tad more customized to our family, and it means that we can eat something that all three of us like.
